Amazing Pumpkin and Sardine snack recipe

Ingredients
  

Pumkin and Sardine snack
  • 250 grams Pumkin
  • 2 cans Sardines you can use sardines in oil or in water
  • 1 egg
  • 150 grams panko you will need about half of it to cover the snacks
  • 5 grams parsley finely cut
  • 100 grams Parmesan grated
  • pinch black pepper
  • pinch salt just a bit, because the sardines are salty
  • 2 cloves garlic grated
  • 1 tsp grounded cinnamon
  • 50 ml olive oil for baking
Dip sauce
  • 50 grams Greek yoghurt
  • squeeze sweet chili sauce

Method
 

Pumpkin and Sardine snack
  1. You will need 250 grams of baked or cooked pumpkin. In case you do not have any leftovers, cut a pumkin in half and put it cut side down on a baking sheet lined with baking paper. Bake it in the oven for about 45 minutes on 200°C until it's soft. Get it out of the oven and let it cool down a bit before scraping the flesh out. Alternatively peel the pumking and cut it in cubes and cook until soft.
  2. Put all the ingredients (except half of the panko) in a bowl and mix it. The mixture will be a little wet. In case it is too wet, you can add some extra panko.
  3. Put the second half of the panko on a plate.
  4. Now create small balls of the mixture and then cover them with panko by rolling them through the panko. You will be able to create about 15 balls.
  5. Add a good amount of olive oil in a pan. Once heated bake the balls until golden. Let it drain and cool down a bit.
  6. Alternatively you can bake the balls in the oven for about 20-25 minutes on 190°C. They will taste delicious, but will be less golden.
Dip sauce
  1. For the dip, put some Greek yoghurt in a bowl and mix it with a bit of sweet chili sauce. Enjoy!
