Shrimp Poke Bowl
A delicious, healthy, quick and easy lunch or dinner recipe to please a sea food lover.
Ingredients
- 100 gr cooked poke rice
- 150 gr shrimp peeled
- half a cucumber in long thin strips
- half an avocado
- 1 clove garlic minced
- 1 tbsp miso paste
- 1 tbsp rice vinegar
- 1 tbsp Mirin
- 2 tbsp red wine vinegar
- 1 tsp brown sugar
- black sesame seeds
- poke ginger sticks
- poke sprinkle
- kewpie mayonnaise if desired
Instructions
- Whisk the miso paste, rice vinegar, mirin and garlic. Pour over the shrimp and marinade for 30 minutes.
- In a separate bowl whisk the red wine vinegar and brown sugar. Pour over the cucumber strips and let it marinade for 30 minutes.
- Bake the shrimp in a pan for a couple of minutes until cooked and sprinkle with sesame seeds.
- Assemble your bowl. I made a flower of the avocado and rolled up the cucumber strips. Sprinkle with some poke sprinkle and drizzle with some kewpie, if desired. Enjoy!
Notes
If you want to make this bowl with even less effort, skip making flowers or cute rolls. Just dice and serve!
