Jack-O-latern Hand Pies recipe

Ingredients
  

Blueberry – Vanilla filling

  • 500 grams frozen blueberries
  • 2 or 3 tbsp cane sugar or any sweetner of your liking
  • 1/2 tsp vanilla powder or use vanilla extract
  • 1/2 tsp agar agar
  • 1 tbsp lime juice

Apple – Cinnamon filling

  • 2 apples peeled and cut into pieces
  • 1 tsp ground cinnamon
  • 2 or 3 tbsp cane sugar or any sweetner of your liking
  • 1 tbsp lime juice
  • 1 tbsp water

Pie crust (patté brissee)

  • 227 grams unsalted butter cold and cut into cubes
  • 300 grams all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 60-120 ml ice cold water
  • 1 tbsp activated charcoal

Egg wash

  • 1 egg yolk
  • a bit of milk

Finishing

  • 1 or 2 tbsp cane sugar

Instructions
 

Blueberry – Vanilla filling

  • Add the frozen blueberries, sugar and vanilla in a sauce pan and let it simmer for about 10 minutes.
  • Add the agar agar and lime juice and let it simmer for a couple of minutes more. Set aside to cool and to set.

Apple – Cinnamon filling

  • Add the apple, cinnamon, sugar, lime juice and water in a sauce pan and let it simmer until the apples come apart. Set aside to cool.

Blank pie crust (Patté brissee). You need half of the mentioned ingredients

  • In the bowl of a food processor, mix half of the flour, half of the sugar and half of the amount of salt. Subsequently add half of the amount of the cubes of butter and mix until the mixture resembles coarse meal.
  • With the machine running, slowly add (half of the amount of) the ice cold water. First start with 30 ml of water, and use more if necessary. You only need water until it gets combined. The dough should not be wet or sticky. Please make sure to not over process the dough. This would result in melted butter in your dough and the final pie crust would not be flaky. And we definitely want it to be flaky!
  • Flatten the dough into a disck and wrap it into plastic foil and refrigerate for at least an hour. If you flatten the dough it can be chilled faster and makes it easier to roll out. The less you have to process it the better, because you don't want the butter to melt before it hits the oven. Because you want the pie crust to be flaky.

Black pie crust (Patté brissee). You need the second half of the ingredients mentioned

  • In the bowl of a food processor, mix the second half of the flour, half of the sugar, half of the amount of salt and all of the activated charcoal. Subsequently add the second half of the amount of the cubes of butter and mix until the mixture resembles coarse meal.
  • With the machine running, slowly add (the second half of the amount of) the ice cold water. First start with 30 ml of water, and use more if necessary. You only need water until it gets combined.
  • Flatten the dough into a disck and wrap it into plastic foil and refrigerate for at least an hour.
  • It is possible to freeze the dough up to one month. Make sure you wrap it good before you put it into the freezer.

Assembling the hand pies

  • Heat the oven to 175°C.
  • Draw the Jack-O-Latern you desire on a piece of paper and cut it out. You can also use a pumpkin shaped cutter.
  • Get one piece of pie dough out of the refrigerater and put it on a lightly floured work surface. Roll it out to a disck of 3 mm thick. Cut the Jack-O-laterns out of the pie dough.
  • You need one part where you have cut out the eyes and mouth out of the pumpkin shape (face pumpkin) and one part with only the pumpkin shape (the base pumpkin) to create one hand pie.
  • Put the base pumpkins on a baking tray lined with baking paper.
  • In the center of the base pumpkins, put 1 or 2 tablespoons of filling. Put the face pumpkin on top. Press down all along the edges with a fork to seal.
  • Beat the egg yolk and mix it with the milk (about 1 tablespoon) and brush the top of your hand pies with it. Sprinkle some cane sugar on top for some extra crunch and deliciousness!
  • Repeat these steps with the second pie dough.
  • Put the assembled Jack-O-laterns in the oven and bake for about 15 minutes to be golden. The real time depends on the oven you use.
  • Enjoy warm or cold!
