Beetroot Napoleons with Prosciutto Roses

A delicious and beautiful appetizer, made with beets, whipped feta and prosciutto roses.

Ingredients
  

  • 3 raw beets
  • 100 gr feta
  • 60 ml Greek Yoghurt
  • 1 tbsp honey
  • 2 slices prosciutto
  • pinch black pepper
  • 8 parsley leaves for decoration

Instructions
 

  • Wrap the beets seperately in aluminum foil and bake them in the oven, on 220 degrees Celcius, for 45 minutes.
  • Make the whipped feta by mixing the feta, yoghurt, honey and black pepper. 
  • Cut a prosciutto slice in half, lenghtwise. Roll each strip into little roses.
  • Once the beets are cooled a bit, peel them and cut them in slices. By mandolin or by hand. Cut rounds out of the beet slices.
  • Assemble the Napoleon by making a stack out of the beets and whipped feta. Start with a beet, then add a layer of whipped feta. Gently place another slice of beet on top and push it down gently. Repeat and end with a slice of beet. I used 4 beet slices in total.
  • Top each Napoleaon with some parsley and a prosciutto rose. Enjoy!

Croatian fig cake, smokvenjak

Croatian fig cake, smokvenjak

Equipment

  • plastic foil
  • Baking paper

Ingredients
  

  • 800 g dried figs
  • 200 g walnuts
  • 130 ml Croatian fruit Schnapps I used Croatian Apple Schnapps
  • bay leaf for decoration

Instructions
 

  • Preheat the oven on 80 degrees Celcius
  • Remove the stems from the figs and cut them in half
  • Put the figs in a food processor and grind them. Take the figs out of the food processor and place them in a large bowl.
  • Put the walnuts in the food processor and grind them. I like to have some crunchy bits, so I don't grind them too much. Add the walnuts in the bowl with the figs.
  • Add the Schnapps and mix everything by hand or with a spoon, until the mixture is combined.
  • Divide the batch in half. Place it in a large piece of plastic foil and mold it in the shape you want. I like to shape it in a disk. The plastic foil makes it easier to mold.
  • Place some baking paper on a baking tray and bake the fig cakes for about 40 minutes.
  • Let it cool completely. Decorate it with bay leafs if you like and enjoy!

Notes

Because it is baked in the oven it’s ready to eat once it has completely cooled. Please do note that it’s best to leave it for a day or two in order to make the Schnapps taste a bit more subtle.
You can pack it in baking paper and store it for several months. It’s makes a wonderful gift as well!

Ingredients
  

  • 2 tbsp (olive) oil
  • 1 onion finely chopped
  • 1 tbsp tomato puree
  • 500 g minced meat
  • pinch of nutmeg
  • 1 tsp kumin
  • 1 tsp (curry) masala
  • 2 pickles finely chopped. I use sweet and sour pickles
  • 125 g canned peas
  • 1 small carrot finely chopped
  • 1 tbsp capers
  • 2 hard boiled eggs chopped into pieces
  • 2 sprigs of celery finely chopped
  • 8 sheets of puff pastry
  • 1 beaten egg

Instructions
 

  • Heat the oven to 200 degrees Celsius (392 degrees Fahrenheit)
  • Heat the oil in a frying pan and cook the onion until softened. Add the tomato puree and stir well. Then add the minced meat, pepper, salt and nutmeg, cumin and masala. Stir well and cook until the minced meat is browned and crumbly.
  • Take the pan off the heat and add the pickles, peas, carrot, capers, egg and celery. Season with salt and pepper and mix well. Let it cool a bit.
  • Fill every sheet of puff pastry with some of the filling (approximately 2 tbsp). Brush the edges with a bit of the beaten egg and fold the puff pastry into a triangle. Seal the edges well with a fork.
  • Brush the triangles with the beaten egg and bake them in the pre-heated oven for about 8 minutes until golden brown. Enjoy!
